San Juan Summer Bagel

    2 Bagels
    10-12 tender fresh spinach leaves, washed, with stems removed.
    2 or 3 small mushrooms, thinly sliced
    2 paper-thin slices of red onion
    1/2 Avocado, sliced
    mayonnaise
    tofu-dill or Caesar's salad dressing dressing

    Wash and remove stems from spinach leaves. Wash and slice mushrooms. Peel and slice avocado. Slice onion. Slice bagels in half and toast under broiler or in toaster oven until golden brown. Assemble sandwich as follows - spread thin layer of mayonnaise on bottom half of bagel. Separate rings of onion and place on bagel. Arrange spinach leaves carefully to form a bed for the avocado slices. Arrange avocado and place mushroom slices on top. Finally, top off with a conservative amount of dressing and place other half of bagel on top.
