PEANUT BRITTLE |

| One of the old time favorites that most people enjoy is old fashion peanut brittle. Peanut brittle is easy to make by following the following recipe. |

| 1 tablespoon margarine (You can use butter). |
| 1 1/2 cups of peanuts. |
| 1/2 cup light corn syrup. |
| 1 cup sugar. |
| 3/4 teaspoon baking soda. |
|
| Note: you can use almonds, pecans cashews or walnuts if wanted. On these, you will need to chop them up. |
| Combine the sugar and corn syrup and cook until the sugar is dissolved and the mixture comes to boil. |
| Add the nuts and then the margarine and cook without stirring until the candy reaches hard-crack stage and the syrup is a clear golden color. Test every 30 seconds by dropping a drop in very cold water until the syrup separate into hard brittle threads and snaps easily. |
| Quickly sprinkle baking soda over mixture and stir and then immediately pour onto pans. Break into pieces and store at room temperature. |
