|
1 doz large eggs.
3/4 cup mayonnaise.
4 teaspoons mustard.
1 tablespoon lemon juice.
1/8 teaspoon cayenne pepper. If you want it not to be as hot cut down the amount.
|
Hard boil the eggs and peel them. Slice each in half lengthwise, making sure you go through the yolk. Remove the yolks and add all the other ingredients to the yolks in a bowl. Mix until smooth.
Return this mixture to the egg white half rounding the top up. You can then sprinkle with paprika. You may want to use a pastry bag to return the yolk mixture to the white egg half.
---
You may want to add 3 tablespoon of some type of different spreads to the egg yolk mixture to give the eggs a different taste. Another thing some people will add to the yolk mixture is 1/4 cup of both finely minced onion and celery mixture to the yolk.
Beside the paprika some people will add other items to the top of the yolk. Some people will add caviar, a leaf of fresh parsley or other food. In place of the caviar use smoked salmon or some other type of item. You can use almost any thing. Good luck.
