PORTLAND MEADOWS STUFFED POTATOE DINNER.

Portland Meadows, Portlalnd local race track, a few years ago wanted to have a one course dinner that they could make for their help and that they could sell for a low price.
They came up with the following recipe for a one item dinner for the help and they sold it to enployee for $1.50 and other people for $3.50. Even at that price they were losing money.
When they found out, after the parking and ticket price come down to $.00, that a lot of people came in and picked up a PM potato dinner and would not stay. As they were losing money they stopped selling them.
Below is their recipe.
1 potato (see below)
1 to 2 cups chili.
1 to 1 1/2 cup chopped onion.
4 teaspoon grated cheese.
1/4 lb beef (option).
1/2 cup sour cream whipped.
1/2 cup chives (option).
Salt and pepper to taste.
3 strips bacon (option).
Get the largest potato that you can find. P.M. came up with the largest potatos that any one had ever seen. They were over 1 pound each.
Clean them good as as the pealing became part of the meal. Cook them in your oven or microwave. You may have to cook them longer because of their large size.
Cup them in half and open them up on a plate. Use a knife and cut lines into the potatos.
At this point take the chili and spread it between the potato and go past both end.
At this point take some butter and spread it over the chili.
You may, if wanted take either 1/4 beef or chopped up bacon and spread it over the butter.
Take the onions and spread it over the above items. (Some people had them leave off the onions.)
Spread the grated cheese over every thing.
Some people then spread some realish over every thing.
PM then added the sour cream.
Some of the people would go over to the hot dog stand and add hot sauce or musterd.
Some will top it off with chives.
When you see what you have you can see that it will become a one course dinner. Serve this with a drink and you will be full.
